I have only started eating Guacamole in the last couple years…..what was wrong with me…. I KNOW!
and since then, I’ve made it SO many various way, but today I am sharing my GO TO Guac recipe.
I CANNOT get enough of this stuff. I like to dip chips, baguette slices, and veggies in it.
It is super simple and quick to whip up and the flavor is THE BEST.
Look at all those beautiful greens!
Get your serrano chiles and remove all the seeds….I am not the biggest fan of spice.
Then prepare your avocados. Look at how beautiful they are!
After the corn is done charring, cut it off the cob and set aside.
Begin mashing up the diced avocado’s until you get a consistency that you like.
- corn, 4 ears
- 3 avocados, ripe/peeled/pitted/diced
- 2 serrano chiles, seeded + diced
- 2 limes, juiced
- 2 Tbsp canola oil
- 1/4 cup cilantro, chopped
- salt + fresh pepper
- Heat a flat skillet to medium heat and set corn on it and let it char, about 5 minutes. Turn all around while they darken and try to evenly char corn. Take off pan and let cool.
- Place diced avocados in a medium bowl + mash with a fork. Add serrano chiles, lime juice, canola oil, and cilantro.
- Cut kernels off cob and add to avocado mixture. Season with salt + pepper. Mix well to combine and ENJOY!
