If you are looking for an amazingly simple tasty potato salad, then you have found it!
This recipe has the perfect blend of spices with a fresh jalapeno, corn with peppers, cumin, cilantro and garlic. I like to make it and let it sit overnight to let the flavors blend and the spice to get more intense.
I like to serve it when I grill burgers and serve it with slices of refreshing watermelon!
Southwest Potato Salad
Super simple potato salad with incredible flavors that will be a huge hit!
Ingredients
- 1 1/2 pounds red skin potatoes
- 2 cans 15.25 oz corn with peppers
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 1 lime
- 1 jalapeno pepper, seeded & minced
- 1 Tbsp fresh cilantro, minced
- 1 1/2 tsp garlic salt
- 1 tsp ground cumin
Instructions
- Place potatoes in a pot with water and bring to a boil. Cook until potatoes are tender, 15-20 minutes. Drain and cool. Cut up into fourths.
- In a small bowl, whisk buttermilk, sour cream, and lime juice until blended.
- Dice up jalapeno by removing seeds and ribs. Mince and stir into bowl.
- Add cilantro and seasonings
- Add potatoes to mixture, stirring all things together carefully
- Refrigerate and flavors will enhance and potato salad will thicken
