This is the PERFECT summer recipe!
You just toss together some chicken, tomatoes, and asparagus and throw it all under the broiler.
So simple, and the taste is phenomenal!
This is my go to recipe that I seriously make about 2 to 3 times a month. Yeah….because it’s THAT good!
First off, start to boil your water for your pasta.
Then gather up all the delicious tomatoes from your garden…
and chop your asparagus…
Toss all other ingredients together, except for the pasta, and this is what it will look like.
Add pasta to boiling water and cook until al dente, then drain.
Then mix with the cooked pasta and add some parmesan cheese and you’re ready to enjoy this deliciousness!
Rustic Balsamic Chicken with tomatoes & asparagus

Ingredients
- 1 lb. penne pasta
- 4 chicken breasts, cut into bite sized pieces
- 1 carton of grape tomatoes
- ½ cup olive oil
- ½ cup balsamic vinegar
- 12 fresh basil leaves chopped or dried basil
- 10 spears of thin asparagus cut into 1” pieces
- 1 tsp minced garlic
- 4 oz grated Parmesan cheese
Instructions
- Prepare pasta according to package directions. Set aside.
- Meanwhile toss chicken pieces, tomatoes, asparagus, oil, vinegar, garlic and basil on a cookie sheet that has a 1” lip.
- Broil for 7-10 minutes or until chicken is cooked through. Pour the entire mixture over pasta. Sprinkle with Parmesan cheese and serve.
- It is THAT simple!

Deryn, Just go ahead and put your broiler on high and let it go for 7-10 minutes, but watch because it could burn fast being under the broiler!
