These Lemon Cookies are just the right amount of cirus burst and heaven.
I am such a huge lover of lemon anything….chicken, pasta, fish….and now COOKIES!
Ever since I was a little girl, I would cut a lemon in half and proceed to just bite into it and eat it.
I know, so strange right?!
Well, I’m still the same way and I LOVE LOVE LOVE Lemons.
I add them to water, salads, marinades, guacamole, fish, pretty much most things. Kinda like people add salt….haha!
So, today I’m sharing these wonderful LEMON COOKIES with you. If you’re a lemon fan, then I think you’d really enjoy these. They are not too strong or powerful, just a great hint of lemon,
PLUS they’re yellow and totally cute for Spring!
Lemon Cookies

Ingredients
- 1 teaspoon vanilla extract
- Confectioner’s sugar, for dusting
- 1 (18 ounce) box lemon cake mix
- 1 (8-ounce) cream cheese, room temperature
- 1 egg
- 1 stick of butter, room temperature
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg.
- Then beat in the vanilla extract. Beat in the cake mix.
- Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar.
- Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and gooey. Cool completely and sprinkle with more confectioners’ sugar, if desired.
