This
FRESH LIME SALSA
is such a delicious, healthy, simple snack to make!
The wonderful blend of avocados, black beans, white corn, and roma tomatoes are perfectly offset by the tartness of the lime juice and vinegar.
It’s a pick me up recipe that is sure to get you singing!
I love to make this as an appetizer with tortilla chips, which is what I will be doing this coming weekend for the Superbowl.
But this also makes a fantastic accompaniment to
these Lime Chicken Enchiladas or any Mexican dish you make!
The best part is that you can add in grilled chicken and make it a lunch.
As you keep it chilled in the fridge, it will also get better as all the flavors settle together.
You will need:
6 roma tomatoes, diced
2 avocados, diced
1 (15.25 oz) can black beans, drained and rinsed
1 (15.25 oz) can white corn, drained
¼ cup fresh cilantro, finely chopped
¼ cup fresh lime juice ( about 2 limes)
2 Tbsp white vinegar
To Make:
Combine all ingredients in a large bowl and serve with chips.
