My oldest son has been very excited about Thanksgiving this year and he kept talking about making a pumpkin pie,
so to make sure that I have a GREAT recipe, we decided to make one together!
I have to say that I am NOT the biggest fan of PUMPKIN anything, so I wasn’t too sure how the final product would be, BUT we added a few special things to really send it over the top and succeded!
The best part was the super thick Pecan Graham Cracker Crust we made, it was delicious and we were all eating it before we even laid it into the pie pan!
The other fun thing was the pan itself that we used.
My boys found it and thought it would be SO funny to make a pumpkin pie INSIDE a pumpkin pan.
They’re 7 and 4….so goofiness is at an all time high.
Here is the pan they brought me, so we went ahead and made the pie (in the pan!)
Who doesn’t LOVE Pecans….i mean if you don’t, i’m not really sure if we can even be friends.
Then make the pie crust. It is SUPER easy….just brown sugar, graham crackers, and your chopped pecans…and butter of course!
Spread it all over the pie pan that you are using.
Then mix up the pumpkin filling and pour it in!
Wah-la! You have made a simpe, easy, and DELICIOUS Pumpkin Pie!
and just look at that CRUST….I mean this pie is half crust and half pumpkin…..just right if you ask me!
- 1/2 cup pecans, finely chopped
- 16 graham crackers, smashed into crumbs
- 8 Tbsp salted butter, melted (1 stick)
- 1/4 cup dark brown sugar
- 15 oz can pumpkin
- 14 oz can sweetened condensed milk
- 2 eggs
- 1 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp nutmeg
- To make crust: preheat oven to 350 F. Finely chop up the pecans. Then bake in oven for 2 minutes to toast them, be careful to not let them burn. Let cool and move oven temperature to 425 F.
- Then put graham crackers in a bag and smash until you have crumbs. Place those crumbs in a mixing bowl, along with pecans and brown sugar. Then add melted butter and mix until it is all incorporated.
- Dump into 9 inch pie pan and spread all around evenly.
- Then mix the pumpkin, condensed milk, eggs, nutmeg, ginger, and cinnamon together in a large bowl. Pour on top of the pie crust and bake for 15 minutes.
- Then reduce oven temperature to 350 F and continue to bake for 40-45 minutes, or until pie is set and not burning.
