I LOVE me a great tasting, super easy, slow cooker recipe!
This one for
Slow Cooker Salsa Verde Chicken
is just perfect.
It’s only 4 ingredients and can be used for SO many various dishes like burritos, bowls, or enchiladas.
I used it to make Salsa Verde Chicken Tacos.
Ingredients:
2 pounds boneless, skinless chicken breasts (about 4 breasts)
16 ounce jar of salsa verde
juice of 1 lime
1 small onion, sliced
To Make:
Pour a small amount of salsa into the bottom of the slow cooker.
Place the onions on top, followed by the chicken breasts.
Pour remaining salsa over the top, reserving about 1/4 cup.
Squeeze lime juice over the top.
Cover and cook on low 4-6 hours.
Shred the chicken using two forks and toss in the cooking liquid.
Stir in the remaining 1/4 cup of salsa.

I just made some flour tortillas, added chopped tomatoes, cilantro, lettuce, and cheese!

Made this tonight and the house smells amazing! Perfect for filling burritos. I did four breast for 5 hours on low and when I got home from grocery shopping it was falling apart tender!
I did add some salt, pepper, and cumin for a little extra flavor. Thanks for sharing this, it was super easy!

Place on a bed of broken Nacho chips. Top with shredded lettuce, chopped tomatoes, chopped green onions, sliced or chopped avocados, dollop of sour cream, and grated Mexican Four Cheese. Yummy!
